Signature restaurant at Fairmont Resort & Spa on Sublime Point Road, this dining destination offers vistas that can’t be found anywhere else, along with Modern Australian cuisine with an emphasis on handmade elements. Celebrating Australian produce and local providores, the constantly-evolving five-course menu is inspired by the seasons – expect dishes like monkfish, scallops, Warrigal greens, soy and orange, paired with a glass of De Beaurepaire Chardonnay. For the main, try lamb, eggplant, truffled hummus and mint, enjoyed with a glass of ‘Richard’ Reserve Pinot Noir.

Exceptional degustation menu. The wagu beef was incredible. Service impeccable. Chef Emilio and Helmi need the Fairmont to do a much better job of advertising this exceptional restaurant or the restaurant needs to move to a new location. It was near to empty on a Friday night but on the website said it was fully booked. Fairmont please fix this to ensure the restaurant survives and thrives as it deserves to
Absolutely delicious, well worth the trip
I've enjoyed a couple of degustation meals here over the last 12 moths, and have absolutely loved it every time. I look forward to trying all the seasons over this year. Highly recommended for anyone wanting a special, fine dining experience. Complex flavours are beautifully combined and presented. A-grade ingredients are respected and delivered in delightful ways. I love it and will be back.
